The food tasting experience in the Nera Valley is, more than elsewhere, tied to the history and landscape of this territory; a green valley crossed by a fast running river, the Nera, to the Ferentillo fortresses as far as the spectacular triple tiers of Marmore Falls. So, copious, clear, fresh water, where trout and crayfish are caught, to be found again on the dinner table, cooked in all sorts of original ways.
Maybe even with the fine black truffles, which with mushrooms and wild asparagus are the most delicious products of the valley.

The Nera Valley begins in Visso and includes the Cascia and Norcia territories, famous everywhere for their pork products. The Terni Nera Valley is equally reknowned! Its pork products are remarkable for their seasoning and flavour. It is practically impossible to pass this way without savouring salame, capocollo, pork sausages and above all “mortadella”. Here too, as in all the Terni district, accompanied by a naturally leavened non-salted bread, baked in a wood fire oven.

Dishes not to be missed!
Some of the typical dishes of local tradition blend together the most characteristic ingredients and flavours of the Valley. Dishes which have been cooked for centuries and still today served in the best restaurants and numerous eating places. Absolutely not to be missed among these, truffle and woodcock croutons, tagliatelle with trout sauce, crayfish in sauce (the crayfish are boiled in salted water and dressed with a sauce made with herbs, oil, parsley and lemon), truffled trout, sheep’s cheese, grilled meats, truffled lamb…
All dressed with the fine extravirgin olive oil of local production awarded the D.O.P. label (quality label).
